Greetings dear readers, and Ramadan Kareem to all of you who celebrate what I personally consider to be the most wonderful time of the year! I’ve spoken before on spending Ramadan without my family, and while I still maintain that it definitely doesn’t have the same flavour to it – it’s a time of year I continue to immensely enjoy nonetheless.
The slower and relaxed vibe (not to mention shorter working hours) is of course much welcomed, but what I’m most looking forward to this year is getting my Ramadan groove back and sticking to a consistent routine throughout the month. Admittedly, last year was challenging to say the least as I was still settling into my new home here in Abu Dhabi. I’m also super inspired to create new whole food plant-based and nutrient dense Ramadan recipes, so stay tuned for those.

Recipes look awesome 😊 I used to cook this Kabsa recipe for an Egyptian ex of mine. It had chicken in it. Do you think tofu would work as a substitute just cubed and thrown in? https://youtu.be/HX9_nwam0rg maybe I should just go ahead and try it. But if it works I think it would be awesome if you did a kabsa recipe, even if a bit different from this one!

Hi Rebecca – I will definitely add that to the list of recipes! I think a grilled tofu or seitan would be delicious in a kabsa-style dish.
