Spicy Red Pepper Gazpacho
(Adapted from the original “Gazpacho” recipe)
Serves 1-2
- 2 large plum tomatoes – roughly chopped
- 1/2 a red pepper – roughly chopped
- 1/2 a red onion – roughly chopped
- 1/4 of a large cucumber – roughly chopped
- 1/2 an avocado + extra to garnish
- 1 spring onion – finely chopped
- 1 large clove of garlic – finely chopped
- 1 tbsp chopped fresh parsley
- 1/2 tsp of sea salt
- Black pepper and cayenne pepper to taste
- 1 tbsp of olive oil
- 1 tsp of lemon juice
- Place all the ingredients in a food processor and process until liquid-y but still fairly chunky. You may have to stop and scrape down the sides from time to time.
- Taste and adjust seasonings as needed. I used about 1 tsp of cayenne pepper and added in a few shakes of garlic powder as well.
- Serve with slices of avocado and a tiny drizzle of olive oil.
If you’re skeptical about this tasting good, I challenge you to try it. Sure, it’s pretty much just a blended salad, but it tastes spectacular. The addition of avocado makes it perfectly creamy and the red pepper and parsley flavours marry beautifully with the spicy zing from the cayenne pepper.

Anyways I’m off to hand in my final assignment of the semester and attempt to sweet-talk my way out of some library fines, but as of 5 o clock today I am officially on winter break!
