Okay, I will admit it. I’ve been absent, yet again.
But this time, I had a pretty good excuse…
As of yesterday afternoon, I am finally, and officially a graduate!
The past 4 years have given me the experience of a lifetime. It wasn’t always easy – I’ve had my fair share of hardships and challenges along the way but also met some incredible people and built so many wonderful memories which I’ll always cherish. It’s been a rollercoaster ride for sure, but one that I wouldn’t trade for the world.
I just wanted to take a second to say thank you, to everyone who reads this blog. Whether you’re a friend, an acquaintance, a fellow blogger or just someone who happened to stumble across one of my recipes – thank you, from the bottom of my heart.
Many people thought I was crazy to start (and regularly maintain) a blog during my final year. My friends didn’t understand where I’d get the time and my parents were worried my schoolwork would suffer. But as it turned out, writing this blog became more than just a place to share my recipes and musings on veganism. It became my creative outlet, a place where all the crazy and often messy experiments that took place in my small flat kitchen would come to life. I found a place where I could freely express myself and discuss my lifestyle choices without the fear of judgement from others – thanks in large part to you, my wonderful readers. Like all things that are important to me, I simply made time for it and if anything, I partly attribute my success in my degree to it. Having a safe haven to return to, if only for an hour a day, where I could ramble on about chickpeas, vent about marathon training and ruminate on the hardships of being vegan in a Middle Eastern culture kept me sane. But your comments, e-mails and messages; knowing that someone was reading all of it? That made it all worth it.
I’ll wrap this up by wishing a Ramadan Kareem to all those observing the holy month. Keep your eyes peeled for some Ramadan themed recipes as well as reviews and recaps from my latest and last trip to the UK (for a while at least).
