Quinoa Confetti Salad

A deliciously light and bright quinoa salad - the perfect lunch on a hot summer's day!
For the salad
  • 2 cups chickpeas cooked
  • 2 cups quinoa cooked and cooled
  • ½ cup yellow bell pepper finely chopped
  • ¼ cup spring onion finely chopped
  • ½ cup carrots grated
  • ½ cup pomegranate seed arils
  • ¼ cup cilantro roughly chopped
For the dressing
  • 3 tbsp lemon juice freshly squeezed
  • 1 tbsp olive oil extra virgin
  • ½ tbsp agave or maple syrup
  1. Combine all the ingredients in a large bowl until well incorporated.
  2. Mix in the lemon juice, olive oil, agave, salt and pepper and taste for seasoning.
  3. Serve on a bed of greens of your choice with sliced avocados, pomegranate seeds and cilantro strands for garnish - devour!
  4. Add sea salt and black pepper to taste for the dressing.
