Gluten-Free Vegan Buckwheat Banana Waffles

  • 1 cup organic buckwheat flour*
  • ¾ cup rice flour*
  • ¼ cup gluten-free rolled oats*
  • ¼ tsp salt
  • ½ tsp baking powder
  • 1¾ cups unsweetened almond milk*
  • ¼ cup organic virgin coconut oil, melted*
  • ¼ cup organic maple syrup*
  • 1 tsp vanilla essence
  • ½ tsp cinnamon
  • 1 medium banana, mashed (roughly half a cup)
  1. Combine the flours, oats, salt, baking powder and cinnamon in a medium bowl and mix well.
  2. Combine the wet ingredients in a separate bowl and whisk together until well incorporated. At this point you'll want to heat your waffle iron and lightly grease using coconut oil.
  3. Combine wet ingredients with dry and mix thoroughly until no major lumps remain.
  4. Pour the batter on to your waffle iron in ½ cup increments and cook as per the instructions specific to your waffle iron.
