Ingredients
3cupscooked chickpeas2 cans chickpeas, drained and rinsed
1/4cupfresh mintfinely chopped
1tbspfresh parsley
1spring onionfinely chopped
3tbsptahini
1 1/2tbsplemon juice
1tbspapple cider vinegar
2-3tbspwater
1tbspBragg's liquid Aminostamari or soy sauce will also work
Freshly ground black pepper to taste
Instructions
Combine dressing ingredients together in a small bowl and whisk until well combined, adding in water 1 tbsp at a time until desired consistency is achieved.Taste for seasonings and adjust.
In a large bowl add chickpeas, fresh herbs, spring onion and mix in dressing until well coated.
