Ingredients
3cupsof chopped shredded kale
2tbspolive oil
1tbspmaple syrupoptional
Juice of one lemon
1tspsea salt
¼cupnutritional yeast
1cupsliced cucumbers
¾cupcherry tomatoeshalved
2tbspsliced onion
2tbsppomegranate seeds
2tbsppumpkin seeds
2tbsppomegranate seeds
1avocado sliced
fresh black pepper
Optional:
1cupcooked chickpeas or lentils
Instructions
Add kale, oil, lemon, salt and nutritional yeast and maple syrup to a large mixing bowl and massage everything together until the kale is tender
Add remaining ingredients and mix well, top with assorted seeds
