Buckwheat Strawberry Pancakes

(Vegan, soy and gluten free)
Serves 1 hungry Nada (makes 5-6 pancakes, don’t judge me)
- 1/4 cup buckwheat flour
- 1/2 cup gluten free flour mix*
- 1-2 heaping tsp of baking powder
- 1/2 cup fresh strawberries
- 1/2 a ripe banana, mashed
- 3/4 cup almond milk + more to thin
- 1 flax egg**
- 1t vanilla essence
- 1 t of melted vegan butter/margarine (optional)
*I used an all-purpose GF mix of rice, potato, tapioca, maize & buckwheat
**1T of flaxseed dissolved in 1 1/2T of warm water
- Combine the dry ingredients in a bowl and set aside.
- In a food processor or blender, combine the almond milk, banana, flax egg, vanilla essence, margarine and all the strawberries save for a small handful.
- Add the strawberry milk mixture to the dry ingredients to combine. When using GF flour you will tend to need more liquid so thin out using some more almond milk or water if the batter’s looking too thick. Chop up the remaining strawberries thinly and add to the batter.
- Lightly grease a pan using some coconut oil or cooking spray over a medium flame, then add the batter in 1/4 cup increments.
Top with bananas, a drizze of agave and some adorable tiny strawberries.
Served with a side of sunbutter.
Come on. You KNOW you want to make these.
